Have you ever made cookies that you thought looked so adorable when they weren't baked yet, and then to know that they turn out kind of deformed and weird and cracked? That ALWAYS happens with my sugar cookies. See exhibit A:
These look just perfect for me - I was so thrilled I made these really cute sugar cookies. But then exhibit B came along:
Mind you, these ones are the second batch already - meaning I modified the recipe, omitting the baking powder and not putting as much sugar as the first one. The first ones were horribly deformed.
Don't get me wrong, they taste really good. But it's just me and my obsession with perfection. Anyhow, here's the recipe for these:
Rolled Sugar Cookies
3/4 cup butter, at room temperature
1 cup white sugar
1/4 cup confectioner's sugar
1 tsp vanilla extract
2 1/2 cups all purpose flour
1/2 tsp salt
pink gel food color
1. Using an electric mixer, cream together butter and sugars until combined.
2. Beat in the eggs and vanilla.
3. Gradually fold in the flour and salt. Separate into two lumps.
4. Add food coloring to one lump of dough, flatten both into discs and chill for at least an hour (24 hours is recommended).
5. Preheat oven to 400 degrees. Working with small batches, roll dough out and cut shapes with a circle cookie cutter, then cutting a heart shape in the center of the cut circle. Chill the dough again when it becomes too soft. Pop the cut-outs in the freezer for about 5 minutes.
6. Change out the colored heart centers with the uncolored ones, and vice versa. Bake for 8-10 minutes, until surface is dull - ideally there should be no brown edges. Leave it on the cookie sheet for 5 more minutes to continue cooking, then transfer onto a wire rack.
Makes 2 dozen.
